2003 Cabernet/Merlot:

Colour: Deep Purple with crimson hue

Bouquet: Big rich blackberry, blackcurrant and blackcherry fruit characters and hints of tobacco/cigarbox are typical of this blend.

Palate: Sweet blackberry, blackcurrant and cherry fruit flavours are complimented by tobacco/cigarbox and chocolate/mocha characters that are finished with subtle spicy oak, firm acid and fine grained tannins.
This wine has great length of flavour and structure to last, with a cellaring potential of 6-8 of careful cellaring, but it is well worth drinking now.

2003 Cabernet/Shiraz:

Colour: Deep purple with crimson hue.

Bouquet: Rich blackberry, blackcurrant and plum fruits on the nose with sweet rose petal perfume and hints of choco/mint on the nose.

Palate: Rich ripe intense fruit flavours of blackberry, plum and some hints of blackcurrant. There are hints of tobacco choc/mint and rose petal characters and subtle spicy oak that is well integrated.
A big structured wine of 15% alcohol but with nicely balanced acid and fine-grained tannins, this is a wine that is drinkable at an early age but will continue to develop in the bottle over the next 6-8 years of careful cellaring.

2004 Chardonnay:

Colour: Pale yellow/straw

Bouquet: Rich ripe peach, melon and fig aromas and hints of oak evident on the nose.

Palate: Rich, sweet peach, melon and fig fruit flavours, and hints of grapefruit/citrus are complimented by the subtle spicy oak and yeast/lees complexity. There is quite a lot of sweetness, balanced out by a firm acid finish.

2004 Shiraz:

Rich ripe plum and blackberry berry fruit flavours are nicely balanced with the spicy oak and a hint of chocolate/mocha on the palate.

There are fine-grained tannins, firm acid and evident spicy vanillin oak characters that come from 16 months maturation in American oak barriques.

This wine is a classic example of Shiraz from the Pyrenees with its deep purple/crimson colour, rich fruit flavours, medium to full bodied structure and well integrated oak characters. This wine has great cellaring potential which would be best drinking over the next 5 — 8 years, but it is also great drinking now.

2004 Cabernet Sauvignon:

This wine exhibits rich blackberry/ blackcurrant Cabernet fruit flavours which are complimented by hints of chocolate/coconut and leafy tobacco characters as well as the regional eucalyptus/mint on the palate.

The toasty cedary/vanillin oak characters and fine grained tannins are attributed to 16 months maturation in French and American oak barriques. This wine is a very flavoursome wine and will continue to develop over the next 6-10 years of careful cellaring but is also drinkable now.

2005 Chardonnay:

Rich sweet peach/melon fruit flavours and hints of grapefruit/citrus are complimented by the spicy oak and a firm acid finish.

This wine has evident spicy oak and yeast/lees complexity which was attributed to being fermented on French oak for 5 months prior to bottling. This wine will further develop in the bottle over the next 2-3 years but its best consumed at an early age to retain its freshness and up front fruit flavours.
